Here are five creative matzah recipes that go beyond the traditional soup. 1. ‘Matzorella’ sticks – The recipe consists of whisked eggs, oil and seltzer, combined with matzo flour, parmesan, baking powder and spices. The matzo pastry is formed around mozzarella cheese sticks and then rolled into a spicy matzo dish before deep-frying. 2. Matzah Lasagna – Start by covering the bottom of a baking dish with marinara sauce. Next, add a layer of matzo that has been coated with egg detergent. Then cover the matzo with cottage cheese, followed by more marinara sauce and another sheet of matzo. Repeat this process one more time before you top it with mozzarella cheese and bake it. 3. Matzah Kimchi Pancakes – This flavorful dish consists of broken pieces of matzo combined with kimchi juice, chopped onions, chopped and drained kimchi and potato starch, along with other herbs and spices. The kimchi mixture is then shaped into patties before finally being cooked. 4. Seven-Layer Matzo Cake – Start by pouring red wine into a baking pan. Next, soak a sheet of matzo in wine and place it on a baking sheet lined with parchment paper. Spread a layer of melted dark chocolate on the matzo. Repeat this process with six other matzah leaves before putting it in the refrigerator. 5. Matzah pizza – First spread the marinara sauce on a matzo sheet. Next sprinkle some parmesan on top. followed by halved cherry tomatoes, crushed paprika flakes, oregano and garlic powder. Just put it in the oven and then enjoy the crunch!
