Ree Drummond has a number of easy healthy recipes to get your New Year off to a great start. Five of The Pioneer Woman star’s healthiest options are full of veggies and anything but boring.

Ree Drummond’s Tin Salad is one of her easy healthy recipes
Drummond combines lettuce and roasted vegetables in their simple sheet pan. Drummond demonstrated how to make their tin salad on an episode of The Pioneer Woman. “I’ll roast the vegetables and when they come out of the oven I’ll make a big salad out of them,” said Drummond.
She makes a simple dressing with tahini, olive oil, maple syrup, salt, water, and lemon juice. When the vegetables are ready, she piles arugula, goat cheese, pomegranate seeds and pistachios roasted in honey over the vegetables and drizzles the dressing over them.

‘The Pioneer Woman’ star does a 10-minute pan turn
Stir Fry is the ultimate vegetarian meal, and Drummond found an easy way to make it heartier without spending a lot of time in the kitchen. She uses prawns, which cook very quickly, so the whole meal is on the table in 10 minutes.
Drummond cooks prawns in a pan with oil and butter over high heat. “That’s part of what makes this food so fast”she explained on an episode of The Pioneer Woman. “Everything cooks really very quickly.”
After removing the prawns, she cooks the zucchini, corn, and red grape tomatoes briefly, adds salt and pepper, and then returns the prawns to the pan.
To serve, The Pioneer Woman Star places the pan dishes on a plate, covers them with fresh basil and Parmesan shavings and squeezes lemon over them. “Honestly, what makes this dish total is lemon juice,” she noted. “That makes it really fresh.”
