In a small bowl, whisk the honey, orange juice and lemon zest together. In a large bowl, add fruits such as strawberries, blueberries, raspberries, kiwis, oranges, apples, mangoes, and grapes. Pour over the dressing and stir gently to combine the flavors. Place in a cool place and serve chilled.

CHICKPEA SANDWICH

Chickpeas are high in protein and fiber, both of which aid in weight loss, satisfy hunger pangs, and take good care of your digestive system. This delicious vegan mix of chickpeas, lettuce, tomatoes and mayo, spread over crispy wholemeal rolls or flatbread, is the best replacement for a McDonald’s burger to start your week.

In a mixing bowl, add chickpeas and mash them with a potato masher until you get a chunky texture. Add red onions, red pepper, vegan mayo, mustard sauce, garlic powder, onion powder, salt, pepper and dill leaves and stir until well mixed. You can also store the chickpea salad in the refrigerator for up to five days. To assemble the sandwich, spread the mixture over the bread and top it with leafy vegetables of your choice. Wrap in parchment paper and enjoy hot on a Monday afternoon!

MUSHROOM CROQUETTES

The crisp exterior with a hearty and tasty mushroom filling that you can’t stop at just one. They taste so good when served warm with mustard sauce or guacamole, an avocado-based Mexican salsa dip.

To make mushroom croquettes, first fry the onion and garlic with the mushrooms. You can also add any herbs of your choice. After a few minutes, season with salt and pepper and set aside. Prepare the white sauce in a small saucepan. It’s not that difficult. All you have to do is whisk the butter and flour together over a low flame while slowly adding the milk, and you get a smooth, lump-free sauce. Fold the mushrooms into the white sauce and refrigerate the mixture for a few hours or overnight.

After cooling, you can roll the filling into the right shape. Spanish croquetas are usually in a wooden shape, but you can roll them into a ball too. Each croquette is rolled in breadcrumbs, then milk and a second layer of breadcrumbs, and dripped into a saucepan of hot oil. They are ready when they are golden brown and nice and crispy on all sides. These croquettes are the best when served crispy straight away.

MANGO SMOOTHIE

Rinse, peel and cut two small to medium sized mangoes into small cubes. Keep half a cup of chopped mangoes aside for future use. Mix the rest of the chopped mangoes in a blender jar along with a cup of fresh Greek yogurt. Also, add three tablespoons of honey. You can even use any other sweetener like unrefined sugar, jaggery, palm jaggery, maple syrup, or coconut sugar. You can skip this if you are nutrition conscious. Sprinkle with half a tablespoon of cinnamon powder, cardamom powder or vanilla extract. Mix to a smooth consistency and store in the refrigerator. Serve the chilled mango smoothie in a tall glass.

BANANA ICE CREAM

This is a popular and healthy ice cream recipe that is made without cooking cream, sugar, and most importantly, without an ice cream machine. Hence, it is known as a guilt-free ice cream dessert and can be served on any occasion.

First, peel the skin, cut three bananas into slices, and freeze them for almost three hours or more. Now transfer the frozen bananas to a grinder or food processor and blend into a thick paste without adding any water or milk. Then add one tablespoon of vanilla extract and three tablespoons of honey. Mix all of them again until it becomes silky smooth. Transfer the mixture to an airtight container and refrigerate for a few hours. Don’t forget to garnish the banana ice cream with chocolate sauce and nuts.

If you want to enjoy a chocolate-flavored banana ice cream, you can add cocoa powder or chocolate pieces while mixing.
