Skajewski says his catering business keeps him busy, creating bespoke menus and meals for a steady stream of events, from intimate home dinners to lavish wedding receptions. He is constantly researching and refining his craft and is particularly interested in teaching and supervising cooking students.

Skajewski was recently the regional head chef for a local hospital system, so naturally he’s interested in making healthier foods like bison.

“Bison is a lean protein than beef and offers a healthier option for those looking to reduce their fat or calorie intake,” he explains. “Like beef, bison also has intramuscular marbling. However, it is finer and offers a softer and more delicate texture.
