Use important oils to make this flavorful Lemon Basil Rooster

There is a long list of things doTERRA essential oils can help with, and they can also add tastier to your food. SOME oils are safe to consume, but be sure to read the label before adding any oil to your food or drink!

Rachael Yerkes of EZPZ Mealz joined us to share a recipe of doTERRA’s oregano and basil essential oils.

Lemon and basil chicken
Ingredients:

  • 1.5 pounds of chicken breast cutlets
  • 1/3 cup mayonnaise
  • 2 drops of oregano oil
  • 3 drops of basil oil
  • 1 TBSP. olive oil
  • 1 TBSP. Fresh lemon juice
  • 1 cup of grated parmesan cheese
  • ¾ cup of panko breadcrumbs, unseasoned
  • 1 TBSP. Melted butter
  • ½ tsp. smoked peppers
  • 1 teaspoon. dried basil
  • ½ tsp. salt
  • ½ tsp. black pepper

For the sauce:

  • 1 cup of chicken broth (or white wine)
  • 6 tbsp. butter
  • 3 cones of garlic chopped
  • ¼ cup lemon juice
  • ½ cup of chopped fresh basil

Directions:
1. Preheat the oven to 425.
2. Combine 1/3 cup mayonnaise, 2 drops of oregano oil, 3 drops of basil oil and 1 tbsp. Lemon juice. Stir to combine and set aside.
3. Combine salt, black pepper, dried basil, paprika, butter, panko and grated cheese in another bowl. Pour into a shallow bowl and set aside.
4. Spread a thin layer of mayo mixture on one side of each chicken piece. Take the chicken and press the mayo side down into the panko mixture to completely coat that side with the parmesan cheese and panko mixture, to completely cover this side with the parmesan cheese and panko mixture cover. Press on it to make sure it is securely in place. Place on a baking sheet with the panko side up.
5. Bake at 425 for 10 = 15 minutes until an internal temperature of 165 is cooked through. The time will depend on the thickness of your chicken.
6. In a pan, add the butter and garlic and set the heat to medium. Stir until the butter has melted.
7. Add the chicken broth or wine and lemon juice and bring to a simmer. Simmer until it has reduced by about 1/3, then stir in the basil.
8. Serve with sauce drizzled on top or on the side for dipping.
