Here is a heart-healthy * recipe that is popular with Latinx chefs and delicious for everyone:
Steak tacos
1 pound flank or rock steak, frozen for 30 minutes
4 tablespoons (1/4 cup) of mazola® Corn oil, divided
3 tablespoons of tamari or reduced sodium soy sauce
3 tbsp freshly squeezed lime juice
3 cloves of garlic, finely chopped
2 teaspoons of chili powder
½ teaspoon of ground cumin
½ teaspoon of dried Mexican oregano
8 taco-sized flour tortillas on a light mazola. coated pan® Corn oil until slightly charred.
Coverings:
Cotija cheese
Chopped coriander
Pickled jalapenos
Lime wedges
In a large bowl, add soy sauce, lime juice, 2 tablespoons of mazola. Mix® Corn oil, chopped garlic, chili powder, cumin and oregano. Take the steak out of the freezer and cut into thin slices across the grain. Put in a bowl with the marinade. Stir to cover. Marinate for 45 minutes to 2 hours. Heat 2 tablespoons of oil in a large pan over high heat. Put the steak in hot oil. Sear on both sides for about 1 minute. Immediately reduce heat to medium heat. Add reserved marinade. Cook, stirring frequently, until the marinade is reduced by half, about 3-4 minutes. Spread the steak over the warmed tortillas. Sprinkle with chopped coriander, crumbles made from cotija cheese and pickled jalapeño. Serve immediately with lime wedges.
