Ree Drummond has a number of easy healthy recipes to get your New Year off to a great start. Five of The Pioneer Woman star’s healthiest options are full of veggies and anything but boring.

Ree Drummond’s Tin Salad is one of her easy healthy recipes

Drummond combines lettuce and roasted vegetables in their simple sheet pan. Drummond demonstrated how to make their tin salad on an episode of The Pioneer Woman. “I’ll roast the vegetables and when they come out of the oven I’ll make a big salad out of them,” said Drummond.

She makes a simple dressing with tahini, olive oil, maple syrup, salt, water, and lemon juice. When the vegetables are ready, she piles arugula, goat cheese, pomegranate seeds and pistachios roasted in honey over the vegetables and drizzles the dressing over them.

‘The Pioneer Woman’ star does a 10-minute pan turn

Stir Fry is the ultimate vegetarian meal, and Drummond found an easy way to make it heartier without spending a lot of time in the kitchen. She uses prawns, which cook very quickly, so the whole meal is on the table in 10 minutes.

Drummond cooks prawns in a pan with oil and butter over high heat. “That’s part of what makes this food so fast”she explained on an episode of The Pioneer Woman. “Everything cooks really very quickly.”

After removing the prawns, she cooks the zucchini, corn, and red grape tomatoes briefly, adds salt and pepper, and then returns the prawns to the pan.

To serve, The Pioneer Woman Star places the pan dishes on a plate, covers them with fresh basil and Parmesan shavings and squeezes lemon over them. “Honestly, what makes this dish total is lemon juice,” she noted. “That makes it really fresh.”

<h2>Drummond calls their favorite Cobb salad “Heaven on a plate”</h2>
<p>Drummond shared her preference for Cobb salad in a blog post by Pioneer Woman in 2014. “I love Cobb salads because there are so many delicious things: crispy vegetables, delicious chicken, eggs, bacon, avocado, tomato”, she wrote.  “And to put it all together, creamy blue cheese dressing.  Heaven on a plate! “</p>
<p>Drummond showcases their Cobb Salad by placing Romana, Iceberg and Bibb Salad on three different sections of a platter.  Then she arranges the toppings (chicken, eggs, bacon, avocado, tomatoes and blue cheese crumble) neatly in rows on the salad.  She sprinkles sliced ​​spring onions over it and drizzles her homemade blue cheese dressing over it.</p>

<h2>Ree Drummonds pasta salad has an easier substitute</h2>
<p>Drummond makes an easier substitution in their pasta salad by replacing pasta with spiraled zucchini.  “I love this Asian noodle salad,” Drummond said on an episode of The Pioneer Woman.  “I’ve been doing it for years.  I usually make it with normal pasta, but I’ll loosen things up by replacing the normal with zucchini noodles. “</p>
<p>She makes a dressing by whisking together olive oil, soy sauce, toasted sesame oil, honey (or brown sugar), lime juice, chopped garlic, ginger, and red chilli pepper.</p>
<p>Drummond combines zucchini spirals, grated red cabbage, grated carrots, sliced ​​cucumber and strips of yellow bell peppers in a bowl.  She topped it with unsalted cashew nuts and dressing and then mixed everything before serving.</p>

<h2>Drummond serves up an epic, customizable chopped salad board</h2>
<p>Drummond also has the perfect solution for a boring salad and is fully customizable.</p>
<p>She places spinach, tomatoes, orange peppers, hard-boiled eggs, cheddar cheese, and bacon on a board, but any of the ingredients can be placed on the plate.  “And you don’t have to be really symmetrical,” she pointed out.</p>
<p>Drummond arranges the ingredients around a container of ranch dressing and sprinkles chopped parsley over the top.</p>
