Cooks share wholesome breakfast recipes for Stand Up To Most cancers

The frightening statistic is that one in two of us will develop cancer at some point in our lives.

But thanks to life-saving research, two in four of us survive ten years or more.

These are better rates than in the 1970s, when it was only one in four.

However, Stand Up To Cancer wants to go a step further and aims to have three out of four people in the UK survive their cancer by 2034.

Stand Up To Cancer is a national fundraising campaign run by Cancer Research UK and Channel 4.

This fall, it will team up with Channel 4’s Sunday Brunch as well as a number of famous faces to encourage people to do a Sunday Brunch raiser to fund life-saving research.

Everyone from Michel Roux Jr, Tom Kerridge, The Hairy Bikers, Rosemary Shrager, Jamie Oliver, Ravinder Bhogal and Nieves Barragan Mohacho share recipe ideas you can cook for friends and then ask them to donate the “bill” for the campaign.

If you’d like to get involved, here are some great, healthy recipe ideas developed by nutritionist Dr. Carrie Ruxton were approved.

Tim Lovejoy, co-host of Sunday Brunch, has a personal reason to support the campaign.

“I didn’t think cancer was something that would affect my life or my family. Then my brother James was diagnosed with pancreatic cancer and died shortly afterwards at the age of 37. It was such a shock. “

Ingredients (for 1-2 people):

  • 1 banana
  • 1 egg
  • ½ teaspoon cinnamon powder

Method:

  1. Cut a whole banana into small pieces and place in a mixing bowl. Beat an egg in the mixing bowl and add half a teaspoon of cinnamon powder. Whisk together until well mixed.
  2. Place small amounts of the pancake mixture in a non-stick hot pan with a tablespoon (no oil). Bake the pancakes over medium heat for about a minute and a half, until golden brown on one side. Turn your pancakes over and cook for another minute and a half until cooked through.
  3. When the pancakes are golden brown on each side, remove the pancakes from the pan and stack them on your plate.

A nutritionist says:

“Spices are used in small amounts in cooking, but they have a big impact in terms of their nutrients and bioactive compounds like polyphenols,” says Carrie.

“A study in the European Journal of Medicinal Chemistry reported that cinnamon has anti-cancer effects thanks to its role in promoting normal cell turnover and fighting free radical damage to cells in the body. Bananas are high in potassium, which is good for blood pressure. “

Jamie Oliver’s Berry Pocket Eggy Bread

Ingredients (for two people):

  • 2 large free range eggs
  • 1 small ripe banana
  • Ground nutmeg
  • cinammon
  • 2 thick slices of pitted wholemeal bread
  • 150g raspberries
  • olive oil
  • 20g peeled pistachios
  • 4 heaping tablespoons of fat-free natural yogurt
  • Manuka honey

Method:

  1. In a mixer, stir the eggs, the peeled banana and a pinch of nutmeg and cinnamon until smooth, then pour into a wide, shallow bowl.
  2. Cut your bread 2½ inches thick, then cut a slit in the longest side of each slice and wiggle your knife in it to make a pocket. Fill in the raspberries with your finger – pack in as many as you can, but be careful not to tear the bread apart.
  3. Put the egg mixture in it and gently mash the bread so it soaks up the eggs.
  4. In the meantime, heat a large non-stick frying pan with a teaspoon of oil over medium heat, then wipe with paper towels.
  5. Pour half of the excess egg mixture onto one side of the pan, then place a piece of soaked bread on top for a nice layer of pancake. Repeat with the rest of the mixture and the other slice next to it. Cook for three to four minutes or until golden brown, then confidently flip them to cook the same time.
  6. In the meantime, crush the pistachios in a mortar – toast beforehand if you like.

A nutritionist says:

“Eggs are high in B vitamins for energy release, vitamin D, which supports immune function, iodine for brain health, and choline, which a Harvard study linked to a lower risk of breast cancer,” says Carrie.

Ravinder Bhogals Kimchi Royals

Ingredients (for four people):

  • 500g Jersey Royals, halved lengthways
  • 30g butter
  • A few drops of sesame oil
  • 300g chopped kimchi
  • 30ml tamarind concentrate
  • 1 tbsp light soy sauce
  • 1 tbsp fish sauce
  • Small handful of sesame seeds, toasted
  • 8 tbsp kewpie mayonnaise (or regular mayonnaise with a pinch of sugar and a dash of lime)
  • Large handful of salted roasted peanuts, roughly chopped
  • 8 spring onions, sliced ​​handful of coriander leaves
  • Handful of broken open spicy shrimp crackers

Method:

  1. Cook the potatoes in salted water until tender. Drain well. Melt the butter with the sesame oil in a pan over medium heat. Put the potatoes in the hot fat and only cook them until crispy and brown on this side. Drain on kitchen paper and keep warm.
  2. In a small bowl, stir together the kimchi, tamarind concentrate, soy sauce and fish sauce. Arrange the potatoes on a platter with the cut surface facing up. Drizzle with the kimchi mixture, then drizzle with the mayonnaise. Scatter peanuts, sesame seeds, spring onions, coriander leaves and shrimp crackers on top.

“Kimchi is full of friendly bacteria that are vital to digestive tract health and are known to prevent early cancerous changes in intestinal cells,” says nutritionist Dr. Carrie Ruxton. ‘Leave the skins on the potatoes for extra vitamin C.’
