Serves 4-6 as a side dish
1 small head of cabbage, pitted and chopped
2 carrots, grated – peeled if you prefer
4 spring onions, thinly sliced
1 red pepper, thinly sliced and cut into inch-sized pieces
1 daikon radish, quartered lengthways and then cut across into thin slices
½ c chopped Italian parsley
Lemon juice & lemon peel
In a small bowl, whisk together the ingredients for the dressing with a fork. In a larger bowl, toss the vegetables together, then add the dressing and stir well.
