On a cold winter night, there might be nothing better than a steaming pot of spicy, warming dal. In just three simple steps, your tried and tested Dutch Oven cooks red and brown lentils in a mixture of delicious spices with tomato paste, carrots and sweet potatoes. Start by heating cumin seeds over medium to high heat. This releases the essential oils in the spice and creates a rich, enhanced taste. Next add onions, garlic and ginger and sauté. Mix the spices, vegetables, lentils and water. Cover and simmer, then add lemon juice, spinach, and coriander. Plug in and enjoy.

3. Wild rice porridge

Porridge has a bad reputation. But this high-fiber, warming breakfast is a delicious upgrade to your signature oatmeal. Make a big pot for the week and decorate it with all of your favorite toppings for an easy, hearty, and healthy winter breakfast. Combine wild rice, water and dried cranberries in your Dutch Oven (or rice cooker). Simmer until the water is gone, so that the rice is over cooked and extremely soft. Puree the entire contents of the pot with a hand blender. If you don’t have a hand blender, put the porridge in a blender. Serve with your favorite toppings like desiccated coconut, pepitas, maple syrup, and dried fruits.

4. Smoky carrot soup

Okay, we could all use some extra immunity boost to start the new year. Chef Julia Turshen, the founder of Equity at the Table, delivers just the right thing with this smoky carrot stew soup. Plus, it’s packed with flavor and anti-inflammatory ingredients. Bonus points for that delicious, simple weekday dinner? You probably have everything you need right in your pantry or refrigerator. The smoky aroma comes from a hearty tablespoon of smoked Spanish pepper. Heat the olive oil in a large saucepan. Add vegetables and pimentón (also known as paprika), pepper and salt. Cook until tender. Add the stock and carrot juice and bring to a boil, then lower and simmer until the carrots are very tender. Finally puree with a hand blender to a smooth mass. Top up with sour cream and serve hot.
