The Games have begun, so The Made in Oklahoma Coalition has two championship-ready recipes for hungry soccer fans.
TikTok-inspired nacho tables are a fun way to keep everyone busy and entertained at your next party. Create a full range of chips, taco meat and nacho cheese sauce using local produce along with local favorites like Ace in the Bowl Salsa, Augusto’s Green Sauce and Sixth Day Snacks Jalapenos.
Put a stack of plates at the end of the table so guests can gather around the treats and eat at their own pace while you play.
Balance the spicy nacho table with Tailgate Honey Nut Caramel Corn. This classic caramel corn is enhanced with locally made Cheatwood’s Honey and Healthy Cravings Bees Knees Honey Cinnamon Nut Mix. Be prepared to make a double batch that will suit your nacho table.
The MIO Coalition also recommends sending caramel corn packaged in bags or as a snack for children or adults on the go.
Nacho table
Servings: 12
For the meat mix:
• 1 pound of ground beef
• 1 pack of taco seasoning
• 1 glass of Ace in the Bowl salsa
Nacho cheese sauce:
• 2 tablespoons of Hiland butter
• 2 tablespoons of Shawnee Mills flour
• 1 cup of Hiland whole milk
• 1 1/2 cups of grated cheddar cheese
• 1/4 teaspoon of salt
• 1/4 teaspoon chili powder
Additional ingredients:
• 2 large bags of tortilla chips
• 1/2 cup chopped fresh coriander
• 2 sliced limes
• 2 tomatoes, chopped
• Hiland sour cream
• Snack salsa on the 6th day
• Snacks on the 6th day with pickled jalapenos
• Augusto’s Green Sauce
For the meat mix: Cook the minced meat over medium heat until there is no pink left. Drain the fat. Add the taco seasoning and salsa, bring to a simmer, then cook over medium-low heat for 15 to 20 minutes.
For the cheese sauce: Put butter and flour in a small saucepan over medium heat. Stir until the butter has melted and the mixture becomes frothy. Add milk and stir as you add. Bring milk to a simmer. Once it has simmered for a few minutes, turn off the heat.
Add cheese and stir until melted. Add salt and chili powder.
Line your kitchen table or island with parchment paper or foil. Spread chips on the table. Sprinkle with meat mixture just before serving. Then drizzle with nacho cheese sauce.
Top with coriander, lime, tomatoes, sour cream, salsa, jalapenos and Augusto’s green sauce.
Note: One way to neatly add the tomatoes or green sauce is to put them in a plastic bottle to drizzle over the nachos. Place plates and several tongs around the table so guests can help themselves.
Tailgate honey nut caramel corn
Servings: 8
• 1/2 cup of popcorn kernels or 1 (3-ounce) bag of microwave popcorn
• 1 cup of Miller Pecan Co. pecans
• 1/2 cup Healthy Cravings Bees Knees honey-cinnamon-nut mix
• 1 cup of brown sugar
• 1/4 cup of pure raw honey from Cheatwood
• 1/2 teaspoon of kosher salt
• 1/2 cup of Hiland butter
• 1/4 teaspoon of baking powder
• 1/2 teaspoon of Griffin’s Vanilla
Cook the popcorn in the air popper or on the stove according to the instructions on the popcorn box. Or grab a bag of popcorn.
Spread popcorn on a large rimmed baking sheet lined with parchment paper. Sprinkle with pecans and nut mixture.
In a small saucepan, mix the brown sugar, honey, salt and butter over medium heat. Cook, stirring frequently, and let the mixture simmer.
Simmer for 4 to 5 minutes, stirring constantly. Remove from heat before mixture gets too dark. Stir in baking powder and vanilla. Pour mixture over popcorn and nuts,
toss gently to coat.
Bake in a 350 F oven for 15 to 20 minutes, stirring every 5 minutes.
Cool completely before serving.
