Fried Chili Squid:

Fried Chilli Squid (Chowman)

Ingredients:

Onion – 40gm

Green pepper – 20gm

Green chilli 8gm

Squids – 130gm

Garlic 2gm

Salt 3gm

White pepper – 1gm

Broth – 200ml

Dark soy – 20ml

Chili paste – 10gm

Tomato ketchup – 10ml

Spring onion – 5gm

Method:

Take all the vegetables and squids and wash them thoroughly in water. Fry the squids in vegetable oil and set aside when they are light brown. Cut the vegetables into pieces and cook.

Strain the boiled water into a bowl and set aside for later use. Chop the garlic cloves and ginger and fry the diced vegetables. Add salt, pepper and the vegetable stock and stir in until thickened.

Add dark soy, ½ teaspoon chili paste and ½ teaspoon tomato ketchup and stir for a few seconds. Add the fried squids to the pan with the ingredients above.

Stir the entire preparation until the desired thickness and taste are achieved. Serve hot and finally sprinkle with spring onions.

Lamb rolls in soy sauce:

Ingredients:

Shredded lamb – 100gm

Ginger 5gm

Garlic 5gm

Chopped onion – 80gm

Oyster sauce-5gm

Dark soy sauce-10gm

Chili paste-10gm

Tomato Ketchup-10gm

Wonton sheets-2 pieces

Sugar-2gm

Salt-2gm

White pepper-1gm

Oil-30ml

Methods:

Take the lamb and wash it thoroughly in plain water. Now chop the lamb and marinate with salt, sugar, pepper, onion, chili paste, ginger and garlic.

Take refined oil in a pan; toss the lamb in a mixture of oyster sauce, soy sauce and tomato ketchup. When done, take the tossed concoction and set it aside.

On the other side, take two pieces of wonton leaves. Place the tossed lamb exactly in the center of the wraps and start rolling the wrap from one end to the other.

Now take the buns and start steaming. When fully steamed, take it out and melt it in soy sauce into your first bite of lamb roll.

Seafood soup:

Prawns -20gm

Crab meat-15gm

Garlic – 2gm

Salt 3gm

Pepper-3gm

Broth powder-3gm

Cornmeal-15gm

Egg-0.25ml

Wine 3ml

Coriander leaf-1gm

Method:

Take squid, crab, and prawn; cut into pieces after thorough cleaning. Boil them and sauté them with garlic.

Add the stock water and mix the broth powder; stir them a little. Pour corn flour over it and stir again.

While the soup is at the boiling point, season the preparation with the required amount of salt, pepper, egg drops and wine. Put the soup in a bowl and then sprinkle with coriander.
