SANTA BARBARA COUNTY, California – The Sansum Diabetes Research Institute will educate Santa Barbara County residents about healthy eating and healthy cooking with its new Veggie IQ initiative.

Veggie IQ held an interactive workshop on healthy cooking with the A to Z Cooking School on the Pilgrim Terrace Urban Farm on Thursday.

The class kept students busy with organic farming and helped students prepare healthy meals, including rainbow bowls and garlic pods.

This program aims to inspire young people to become the first Santa Barbara youth scientists committed to improving the health of the local Latino community.

Youth academics will use science and technology to highlight the important links between good food and good physical and mental wellbeing.

The program hopes to increase awareness and access to healthy food for marginalized students and families in the community.

The Sansum Diabetes Research Institute says the Latino community has had serious long-term medical problems caused by difficulties in accessing healthy food. This includes a disproportionate exposure to diabetes and other serious medical conditions.

With Veggie IQ, they hope to help marginalized communities become interested in health, science, technology, community service, and leadership.

The Veggie IQ science sessions take place twice a month after school from April to December 2021. One will be in person and one online via Zoom.

The application deadline has been extended to June 30th.
