However, when you’re gluten-free and soy-free things suddenly get a little tougher, especially since soy and gluten are usually the main ingredients in most plant-based proteins (think scrambled tofu eggs, tempeh bacon, and “wheat meat” made from vital wheat gluten). So, by working on a plant-based basis while avoiding soy and gluten, you can mostly focus on beans (lentils, chickpeas, and so much more!), Quinoa, teff, buckwheat, and amaranth.

Thursday
