1. Recipe for tomato and jasmine tea soup:

Ingredients for tomato and jasmine tea soup

  • 1 kg of tomato
  • 2 grams of jasmine tea
  • 2 grams of thyme
  • 1 gram of Tabasco
  • 1 gram of truffle oil
  • Taste salt
  • Garlic bread (optional)
  • Taste pepper
  1. Take the tomatoes, peel them and remove all seeds.
  2. Boil the tomatoes in hot water and use the blender to make a smooth puree.
  3. Strain the puree into the sieve
  4. After getting a smooth puree, add pepper, fresh thyme, tabasco and salt to taste.
  5. Pour jasmine tea water into the vessel to boil.
  6. After making tomato puree and jasmine tea, mix them together.
  7. Heat the soup until it boils and drizzle truffle oil over it.
  8. Add a serving of garlic bread if desired.

2. Mulligatawny soup recipe

Ingredients for mulligatawny soup

  • 1 1/2 teaspoons of vegetable oil
  • 3-4 shallots (diced)
  • 10 g ginger (chopped)
  • 1 garlic (minced)
  • 1 green chilli (chopped)
  • Some cardamom seeds
  • 1 cinnamon stick
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 1/2 teaspoons coriander powder
  • 30-40 g red peppers (diced)
  • 1 bay leaf
  • 5-6 black peppercorns
  • 100 g red lentils (Masoor Dal) soaked for an hour
  • 1/2 cup coconut milk
  • 1/2 lime (juiced)
  • 1 tbsp tamarind pulp
  • 1 1/2 liters of vegetable stock
  • 20 g apple, grated
  • 40 g carrots, grated
  • 1 medium-sized potato grated
  • salt and pepper
  • 2-3 sprigs of fresh coriander leaves
  1. Heat the pan with a little vegetable oil, add a few shallots (a botanical variety of onion), ginger, garlic and green chillies.
  2. Then add all the spices, whole and in powder form, and cook for about 4 minutes.
  3. Add the soaked lentils, apples, potatoes, carrots and sauté for 3 minutes.
  4. Then add the vegetable stock and tamarind pulp and simmer for a while until it is cooked through.
  5. You can season as you like.
  6. Mix them into a smooth puree.
  7. Season to taste with coconut milk, coriander leaves and lemon juice.
  8. Serve hot.

3. Recipe for the Betreet soup:

1 cup beetroot (chopped), peeled
1 cup bottle gourd (ghiya) (chopped), peeled
1/2 cup onion, chopped
1/2 cup tomatoes, chopped
1/2 cup potato (chopped), peeled
1/2 teaspoon sugar and salt to taste
1/4 teaspoon black pepper, ground
chopped coriander leaves and cream

  1. Put two cups of water in a pan, then add the beetroot, bottle gourd, onion, tomato, and potato.
  2. Bring to a boil, then simmer until all of the vegetables are tender.
  3. Bring to the boil and simmer until all the vegetables are tender.
  4. Also, add sugar, salt, and black pepper depending on your taste.
  5. Serve hot or chilled and garnish the soup with cream and coriander leaves.

4. Recipe for hot and sour soup

Ingredients for the hot and sour soup

6 cups of broth
1/4 cup cornstarch dissolved in 1/2 cup water or the stock
1/2 teaspoon soy sauce
1/4 cup of vinegar
2 teaspoons chili sauce
2 teaspoons of salt or to taste
1 tbsp finely chopped celery
1/4 cup tomato ketchup
1/2 teaspoon black pepper – mix together
1 teaspoon of finely chopped garlic
1/2 cup finely chopped onions
1/2 cup finely grated carrots
1 cup finely grated cabbage

  1. Add all the ingredients and let the broth simmer until it boils.
  2. Keep stirring and simmer for about 2-3 minutes.
  3. Add the carrots, cabbage and a little lime juice.
  4. Bring to the boil and serve.
