Give Christmas recipes a healthy touch

Recipe # 1: Lemon Coconut Cookies

Duration: 30 minutes

For: 4-6 people

Steps:

  1. The Voltas Beko microwave oven at 180o C. preheat
  2. Mix all ingredients
  3. Shape the cookies however you like
  4. Bake for 15 minutes, until lightly golden
  5. Drizzle the biscuits with melted chocolate

Recipe # 2: broccoli crust pizza for the millennial diners:

Duration: 30 minutes
For: 2-3 people

Steps:

  1. The Voltas Beko microwave oven at 180o C. preheat
  2. Chop the broccoli in the food processor.
  3. Put the broccoli in a large bowl. Cover with cling film and microwave for 1 minute until steamed
  4. Let the broccoli cool and pour onto a clean cloth and squeeze the liquid out of the broccoli until you have a dry broccoli ball left
  5. In a large bowl, mix the broccoli, eggs, cheese, and spices with a spoon until well mixed
  6. Pour the mixture onto the pre-lined baking sheet and shape it like a pizza crust 1/2 inch thick
  7. Bake for 10-12 minutes
  8. Add the pizza sauce and cheese
  9. Bake for another 10-12 minutes
  10. Let cool for 5 minutes before cutting

Recipe # 3: blueberry coconut smoothie

Duration: 1 hour
For: 1 -2 people

steps:

  8. Finally, put 1 banana, 170 g coconut cream, 15 g unsweetened desiccated coconut, 20 g maple or agave syrup, a handful of fresh blueberries and coconut flakes in a blender for topping and drain

  10. Finish it off by garnishing it with fresh blueberries and coconut flakes
