The Hungry Calypso Food Truck uses family recipes made with fresh produce – nothing is prepackaged.
Owner Dana Nibler says there aren’t any major grocery distribution networks in the Caribbean, so everything is made from scratch. She says, “Anything canned in the Caribbean is not considered authentic.”
The Hungry Calypso attaches great importance to healthy nutrition, but also wants it to taste really good.
The jerk chicken and the Cuban dish (The Bowl of Pigs) are very popular with the fans.
They also carry vegan options like the Jerk Portobello Mushroom Plate which is to die for!
Caribbean cuisine is calming and is all about family. The dishes are not too spicy, so that the little ones can also enjoy them. But Dana says, “For those soldiers who like spicier dishes, let the cook know and we’ll have you!”
