Chocolate covered pomegranate clusters

  • 1 cup (8 ounces) pomegranate seeds
  • 2⁄3 cup (4 ounce) organic bittersweet chocolate chips, such as Ghirardelli 60%
  • 1/4 teaspoon turmeric
  • 1⁄8 teaspoon black pepper
  • 1⁄4 cup fresh basil, stemmed and julienned

* 2⁄3 cup (4 ounces) high quality dark chocolate, finely chopped, can replace the chocolate chips

Place the pomegranate seeds on paper towels to absorb excess moisture. Melt the chocolate chips in a small, heavy-bottomed saucepan over low to medium heat, stirring frequently, for 2 to 3 minutes. Take the pot off the burner. Add the pomegranate seeds and stir in the spices. Use a fork to scoop out small chocolate-covered clusters and place each on a plate lined with waxed paper. Garnish with mint. Chill until the chocolate is firm, about 15 minutes.
