Vitamin educator program develops a partnership with Knox Center Faculty – Salisbury Publish

The Expanded Food & Nutrition Education Program partnered with Knox Middle School principal Michael Courtright and health / physical education teacher Sandra Mitchell. This partnership is based on the introduction of a teenage kitchen designed to teach grades 6 through 12 essential life skills to promote optimal health – both now and in the future. The curriculum addresses key concepts related to nutrition, food preparation and cooking, food safety, and physical activity using approaches and strategies that improve learning and behavior change in adolescents. The program was developed and evaluated by Virginia Cooperative Extension through strong partnerships between the Virginia Family Nutrition Program, 4-H and the Family and Consumer Sciences program areas.

Goal of the teenage kitchen

  • Use MyPlate for planning meals and snacks, including breakfast
  • Identify nutrient-dense foods and drinks that are low in sugar, saturated fats, and sodium
  • Read and follow a recipe with proper cook measuring techniques
  • Demonstrate safe knife handling skills
  • Prepare food safety to prevent foodborne diseases
  • Use food labels to help choose healthier foods and snacks
  • Understand the importance of physical activity and think about how you can incorporate it into everyday life
